Herbal Roasted Leg of Lamb with Juniper & Rosemary

An earthy, aromatic centerpiece. The lamb is slow-roasted with juniper berries, rosemary, and
thyme, creating a rich, wild woodland flavor. Perfect with a dark berry compote.
Ingredients:
- 1 leg of lamb (5-6 lbs)
- 3 tbsp olive oil
- 2 tbsp juniper berries, crushed
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme leaves
- Salt and black pepper
- Optional: 1 cup red wine for basting
Instructions:
- Preheat oven to 325°F (160°C).
- Mix olive oil, juniper, garlic, rosemary, thyme, salt, and pepper.
- Rub mixture all over lamb. Place in roasting pan.
- Roast for 1.5-2 hours, basting occasionally with red wine.
- Rest 15 minutes before carving. Serve with berry compote.
