Red Wine Poached Pears with Dark Chocolate Ganache

Velvety pears, blushed from a slow simmer in spiced red wine, sit atop pools of silky dark chocolate ganache. The flavors are deep, mysterious, and luxurious, notes of cinnamon, clove, and orange peel unfold with each bite. A final sprinkle of toasted hazelnuts adds crunch, making this dessert the perfect end to a dark, dreamy spring meal.

Ingredients:

  • 4 firm Bosc pears, peeled, stems on
  • 2 cups dry red wine
  • ½ cup sugar
  • 1 cinnamon stick
  • 2 star anise
  • 3 cloves
  • Zest of 1 orange
  • ¾ cup heavy cream
  • 1 cup dark chocolate (70%), chopped
  • Crushed hazelnuts for garnish

Instructions:

  1. Poach pears: In a saucepan, combine wine, sugar, spices, and orange zest. Bring to a simmer.
  2. Add pears and cook gently for 20-25 min until tender. Turn occasionally for even color.
  3. Cool pears in the liquid.
  4. Ganache: Heat cream until steaming, pour over chopped chocolate. Whisk until smooth.
  5. To serve, drizzle ganache on the plate, place pear on top, sprinkle with nuts.
